TUNA STEAKS WITH RADISH-AVOCADO SALSA

  

Ingredients

  • 6 (6-oz) tuna steaks (or use salmon or swordfish)
  • 1 tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil
  • 1½ Tbsp fresh lemon juice
  • 2 avocados, chopped
  • 12 radishes, thinly sliced
  • ½ cup thinly sliced red onion
  • ¼ cup torn fresh basil
  • ½ cup chopped, salted, roasted, shelled pistachios

Instructions

  1. Sprinkle tuna with salt and pepper; sear in batches in hot oil in a large skillet over medium-high heat 2 minutes per side or to desired doneness.
  2. Toss together lemon juice and avocados in a bowl; gently stir in radishes and onion.
  3. Serve over tuna; sprinkle with basil and nuts.

ROASTED GREEN BEANS WITH GOAT CHEESE

Side Dish Ingredients

  • 1½ lb green beans, trimmed
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tsp lemon zest
  • ½ cup crumbled goat cheese (or use feta)

Side Dish Instructions

  1. Preheat oven to 425°F. Toss beans with oil on a baking sheet.
  2. Bake 15 minutes or until crisp-tender.
  3. Sprinkle with salt and pepper; toss with zest. Top with cheese.
