Tuna Steaks with Radish-Avocado Salsa

TUNA STEAKS WITH RADISH-AVOCADO SALSA
Ingredients
- 6 (6-oz) tuna steaks (or use salmon or swordfish)
- 1 tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil
- 1½ Tbsp fresh lemon juice
- 2 avocados, chopped
- 12 radishes, thinly sliced
- ½ cup thinly sliced red onion
- ¼ cup torn fresh basil
- ½ cup chopped, salted, roasted, shelled pistachios
Instructions
- Sprinkle tuna with salt and pepper; sear in batches in hot oil in a large skillet over medium-high heat 2 minutes per side or to desired doneness.
- Toss together lemon juice and avocados in a bowl; gently stir in radishes and onion.
- Serve over tuna; sprinkle with basil and nuts.
ROASTED GREEN BEANS WITH GOAT CHEESE
Side Dish Ingredients
- 1½ lb green beans, trimmed
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 2 tsp lemon zest
- ½ cup crumbled goat cheese (or use feta)
Side Dish Instructions
- Preheat oven to 425°F. Toss beans with oil on a baking sheet.
- Bake 15 minutes or until crisp-tender.
- Sprinkle with salt and pepper; toss with zest. Top with cheese.
