Champagne Pickled Shrimp.

CHAMPAGNE PICKLED SHRIMP PAIRED WITH DIAMOND COLLECTION PINOT GRIGIO 

Ingredients

  • 3 lb peeled and deveined large cooked shrimp
  • ¾ cup olive oil
  • 1½ cups champagne (or sparkling wine)
  • ½ cup orange juice
  • 6 sprigs fresh rosemary
  • ½ red onion, sliced
  • 6 bay leaves
  • 4 cloves garlic, thinly sliced
  • 1 Tbsp kosher salt
  • 1 tsp celery seed
  • 1 tsp mustard seeds
  • 1 tsp crushed red pepper

Instructions

  1. Place shrimp in a large bowl; add all remaining ingredients, toss.
  2. Cover, and refrigerate, stirring occasionally, at least 1 day before serving.
