Here are one of the two recipes by Italia's mother-in-law that she included in her book, Mama Coppola's Pasta Book. Look for meats cut for scaloppini or ask your butcher if she or he can slice some for you.

Italia's Quick Tomato Sauce

This sauce is a bit heartier than the sauces that do not contain carrots and celery, but it is just as simple to make. Serve it with pasta, polenta and with any dish that calls for tomato sauce.

Italia's Tomato-Mozzarella Sauce

The addition of mozzarella near the end of cooking this quick sauce adds a voluptuous quality that is typically achieved with lengthy cooking.

Italia's Pesto

When Italia was cooking, there was no problem getting Italian pine nuts. Now they are hard to find. If you cannot find pine nuts that are not from China, consider using walnuts instead.
